Raw cacao & hemp seed energy bites

Us lentils love a raw vegan energy bite to fuel us when we’re scooping!

These little balls of nutritious goodness are so quick and easy to make! They give you that ‘chocolatey fix’ whilst at the same time being super healthy. The dates and seeds mean they are also energy dense, so will keep you powering on through the day until the next meal time.

Ingredients:

• 160g pitted dates, soaked in hot water for about 10 minutes

• 6 tablespoons hemp seeds

• 3 tablespoons raw cacao powder

• 2 tablespoons desiccated coconut (plus extra for coating, if you fancy)

• ½ tablespoon coconut oil

• small pinch of sea salt

• 1-3 teaspoons water, if needed

Method:

  1. Blitz the pitted dates in a food processor until they begin to form a ball.
  2. Add the remaining ingredients and process until thoroughly combined and almost smooth (it’s nice to maintain a bit of texture). The dough needs to be sticky, NOT crumbly… add the water, a teaspoon at a time to increase the stickiness if required.
  3. Line a plate with baking paper and shape the dough into balls with slightly wet hands.
  4. Place the balls in the fridge to chill for a few hours.

The balls keep really well for at least a week if kept sealed in an air-tight container in the fridge.
